Thanks to my friend Nikki for sharing this awesome healthy snack recipe. One of these little things packs almost 5 grams of protein, 8 grams of healthy fat, and minimal carbs (only 2.7 grams of sugar).
Ingredients:
1 scoop Sunwarrior Vanilla Protein Powder (vegan)
2 tablespoons shredded unsweetened coconut flakes (I used Bob’s Red Mill brand)
1 tablespoon coconut oil, melted
1.5 tablespoons Sunbutter
1 tablespoon real maple syrup or honey
1 tablespoon chia seeds
2 tablespoons unsweetened almond milk
1 tablespoon raw cocao nibs
Mix together in a bowl and roll into balls. Makes 7. Refrigerate up to 3 days in an airĀ tight container.
